Brazilian Rice cakes

If you always seem to have leftover rice in your refrigerator that you'd rather not go to waste, here is a very easy way to turn your plain steamed leftover white or brown rice into a delicious snack or side dish!


Ingredients:


  • 1 cup of rice (cooked and seasoned)

  • 2 medium eggs

  • 1 cup of grated Parmesan cheese

  • 2 tbs of flour 
  • 1 cup of milk

  • 1 tsp of baking powder

  • salt to taste (I use 1 ½ tsp)

  • 1 large diced tomato (don't use the seeds)

  • 1 cup of mozzarella cheese

  • ½ cup of fresh basil or parsley (chopped)


How to make it

Preheat oven to 400 degrees F.

Coat the muffin tin with nonstick cooking spray

Mix the first 7 ingredients in a blender (about 30sec)

Add the tomato and mozzarella and mix

Spoon batter into muffin tin ( a little more than a half full)

Bake until golden brown and a toothpick inserted into the center comes out clean. 20 to 25 minutes.

 

    Other information:

    1. Add sliced smoked turkey breast to the mixture for a distinctive flavor

    2. If you prefer the ingredients can be mixed in a bowl instead of blending it

    3. This dish takes about 35 minutes to prepare

    4. It makes about 6 rice cakes
