Broccoli and potato casserole




  • 6 medium size potatoes, cooked, peeled and grated (I use the cheese grater or cut the slices with a knife)

  • 2 cups of broccoli florets (coked in boiling water (3 to 5 min)

  • 1 1/2 teaspoons salt

  • 1 pinch of black pepper

  • 1 cup sour cream

  • ½ cup of celery cream soup

  • 1 bunch green onions (5 to 6), chopped

  • 1 cup shredded Cheddar cheese

  • 1 small onion (small chopped)

  • 2 garlic cloves (chopped)

  • 1 cup of turkey bacon ( cut in small pieces)

  • 1/4 cup melted butter

  • 2 tsp of oregano

  • 1 tbs of olive oil

How to make it

Lightly butter a 2-quart casserole.

Bring a pan to a medium heat with the olive oil on it, add the turkey bacon and let it fry for about two minutes.

Add the onion and garlic and fry for another two minutes, set aside.

In a large bowl, combine the potatoes, broccoli, salt , black pepper, sower cream, celery cream, green onions and cheddar cheese ( I leave a little bit for the top).

Spoon the mixture into the casserole. Add the extra cheddar cheese and some batter to the top.

Bake it at 385° for 25 minutes than turn the broil for another 8 minutes.
