Curry Chicken with Coconut milk

 

Ingredients:


  • 1 pound boneless chicken breast (large dices)

  • 4 pieces of boneless chicken thighs (large dices)

  • 3/4 cup white onion (small dice)

  • 1 1/2 cups coconut milk (400 ML approximately)

  • 2 tablespoons chopped scallions

  • 2 tablespoon chopped parsley

  • 1 tablespoon yellow curry

  • 3 gloves minced garlic

  • 2 teaspoon minced ginger

  • 1 tablespoon lemon juice

  • 1 tablespoon tomato paste

  • 2 tablespoon heavy cream

  • ½ cup of diced fresh mushrooms

  • salt and black pepper

  • olive oil

 

    How to make it


    In a bowl add the chicken, the ginger, garlic, curry powder and the lemon juice. One nice pinch of salt, a small pinch of black pepper and a drizzle of olive oil. About a tablespoon.

    Mix everything with your hand until fully incorporated. Then cover the bowl with plastic, put it in the refrigerator and let it stand for about 30 min.

    In a large pan or skillet ( I like to use a large skillet), heat about 2 tablespoons of olive oils add chicken and light brown it on one side, flip and light brown it on the other side. It would take about two min each side.


    After the chicken is nicely browned on both sides, stir in the chopped onion and fry for two min.

    Next add the mushrooms and continue to stir fry for another minute. Then stir in the coconut milk and tomato paste. Make sure the tomato paste is fully incorporated with other ingredients.

    Continue cocking for about three minutes than add the heavy cream and cook for another minute.

    Put it into a serving dish and garnish with the chopped scallions and parsley.


    Other information:

     

    1. It is always a good idea to have all of your ingredients cut and measured up before hand, because of the quickness of cooking this dish. If you have have your ingredients ready before hand you can just toss them in and not have to worry about burning and ruining anything.

    2. Prepare jasmine rice to serve with your dish.

    3. This dish takes about 1 hour to be ready – plan your time.

    4. It serves about 4.
