How to make it
In a medium skillet heat 1tbs of olive oil, cook the ground turkey (salt and pepper to taste) until browned over medium heat. Drain, and set aside.
Heat the olive oil in a large skillet for two minutes, than add the onion and the garlic and cook until light brown.
Combine the yellow squash and green pepper in the skillet and cook it for 2 min.
Add the cooked ground Turkey and tomato gently mixing it – let it cook for another 3 min.
You can use it as stuffing for tomatoes, zucchinis, bell pepper or wraps
– Add Alfredo sauce to the mix and make a delicious pasta (my suggestion is cheese tortellini)
– This dish takes about 25 minutes to prepare (counting cutting the ingredients)
– It serves about 2
