Healthy Quiche

Ingredients:

  • 3 handfuls of fresh spinach

  • 2 tomatoes

  • 1 medium size leek

  • ½ cup of mushrooms

  • ½ cup of chopped onion

  • 2 cloves of garlic

  • 6 eggs

  • About 2 cups of broccoli

  • 2 tbs of fresh basil

  • 2 tbs of olive oil

  • 1 tsp of oregano

  • Salt & pepper.

 

How to make it

Wash the spinach properly (you can use salad spinner) chop the other veggies in small pieces ,peel off the garlic cloves and chop it.

Preheat the oven to 355 degrees.

Crack the eggs. Use 4 egg whites and 2 whole egg. Mix the yolk in with the egg whites with a fork.

On a large pan heat the olive oil and fry the onion for about two minutes or until light brown. Add the mushrooms and fry it for two minutes. Add the other veggies and saute until the broccoli is soft, than you can add the garlic. Season it to taste.

Add the veggies into a casserole dish or a nonstick deep cookie sheet.

Pour the eggs over the veggies. Add the oregano and a pinch of salt & pepper over the top.

Place the casserole dish or the cookie sheet into the preheated oven. Bake until the top gets slightly brown (15 – 20 minutes).

When it’s ready, take it out of the oven and let it cool down for a few minutes.

Other information:

  1. You can use a cup cake pan to make little quiches (don't forget to coat it with non stick spray).

  2. You can also freeze them, and use it when you are out of time to prepare something.
